Buñuelos de Viento (Mexican Fritters)


Ingredients

For the buñuelos: 2 eggs, 2 cups of milk, 2 cups all-purpose flour, 1 Teaspoon Vanilla, 1 Tablespoon Sugar

For the sugar coating: 1 ¼ cup sugar, 1 ½ Teaspoon ground cinnamon, ¼ Teaspoon ground ginger

Oil to Fry: 6 Cups Vegetable Oil

Instructions

  1. In a large bowl, whisk together all the ingredients just until everything has been combined, continuously whisking until your liquid has been fully incorporated and your batter is smooth.
  2. Preheat a deep-frying pan or Dutch oven filled with 6 cups of vegetable oil. Once your oil reaches 350 degrees, place your rosette iron in the oil for about one minute. While the rosette iron heats up, make the sugar coating. In a medium-sized bowl, whisk together the sugar, cinnamon and ginger, then set aside.
  3. Take your rosette out of the oil and carefully dip your rosette HALF WAY into the batter. (If you completely submerge the rosette into the batter, the buñuelo will enclose your iron once you dip it into the oil and won't release). Your iron needs to be hot enough so when you dip it into the batter, it sizzles.
  4. Place the rosette back into the oil and gently shake until the buñuelo releases into the oil. Fry for 30 seconds to a minute then flip over and fry another 30 seconds to a minute until the buñuelo is golden and crispy then carefully transfer it to the spiced sugar mixture and toss until coated.

Important: Please Season the mold before your first use.

  • Boil water in a pot and place the rosette mold in the hot water.
  • Let it sit in the boiling water until the water cools completely to room temperature.
  • Thoroughly dry the mold.
  • Place the mold in hot oil (at frying temperature) then remove the pot from the heat and let the mold rest in the oil overnight.

It did well. I'm just hoping that with continued use,it won't strip. I had to keep tightening it to the base. It was my first time making bunuelos with a mold. I did well. Read directions before first use.

I bought the bigger size as other people suggested. I’m glad I did! I followed the instructions to cure the mold and also used the recipe provided (it yields approx 25 pieces)They turned out great! They’re beautiful and taste like traditional Mexican buñuelos.A few tips: keep the oil hot but not too hot. Put the mold in the oil for a few seconds and then wipe the excess on a paper towel before dipping it into the batter.You’ll now that the oil and/or mold is too hot if:1. The buñuelo falls from the mold into the batter before you can put into the oil.2. The buñuelos are full of bubbles once you fry them.3. The buñuelos are too thin.Adjust the heat accordingly. The buñuelo should easily separate from the mold once you start to fry it.I’ve made two batches. The first time I sprinkled sugar with cinnamon when they were warm. The second time I finished my batch and once they were cold I put the sugar-cinnamon mix. I had to press the buñuelo gently on a plate with the mix for it to stick. I prefer the second option as I worked faster and the sugar still stayed stuck to the buñuelo

Yo compré el de 4.7 pulgadas sin embargo recomendaría comprar el de 5.7 porque así el molde absorbe más masa y se siente un buñuelo más completo. Con el de 4.7 como es poca masa se siente que absorbe mucho aceite. Voy a pedir el de 5.7 para ver si hay diferencia. Usé la receta de Jauja en YouTube y quedaron perfectos! Muy ricos solo si me da la impresión de que con un molde más grande sería mejor.Los buñuelos se resbalan muy bien, funciona excelente.
