Fold it in half and clip it with metal binder clips to hold the fish in it's own little pouch....I LOVE THIS, going to buy another to keep it on hand but used it about 6 times doing this and works great doing what I just described. I put two binder clips on each short side and 3 binder clips on the long front side and always flip with the three binder clips in front of you. OK so I just gave my brilliant idea to the company. I wash mine in the sink, I keep it folded and let it soak in dishwater for a bit then I rinse it out and if any food stuff in wholes I just scrape them out with sponge and it come out.

Great for grilling! I love just putting my salmon on a sheet! The warning on the package is right! It says no direct fire. So, if your flames go all crazy and flames lick up onto it (like when you're desperately wanting to grill in a 20-degree Minnesota winter), you'll probably get a few small holes in it like I did. Well worth it.Also, I didn't have any luck fitting that nice storage ring onto mine like in the photo.

good product for cooking small foods without having to lay them over a cookie sheet. Was able to cook some chicken wings in the overn without having to turn over half way (like you would with a cookie sheet). Only bad thing was that the border seems to be just tape (not glued very well) that does not hold together (oven at 375 degrees). I just tore the border off and seems to have actually improved the product.

Bought this to take on vacation as I knew the grill at the place we were staying wouldn't have a grill pan. The fact that it rolls up in a small box was so easy to pack. We did pizza and veggies on it and it worked really well. The pizza just slid off onto a cutting board. Cleanup is as easy too. I've since bought more for gifts.

Really Really like the concept, and it worked well for the first 1/2 hour of grilling carne asada. The extended amount of grilling time and the heat brought about by the flames due to fat left the mat cremated, sadly. We'll keep looking.

I have BBQ'd kabobs and chicken over charcoal and kabobs over gas. Food does not stick it also does not get those grill lines we all love, but i'd buy these again. I also grilled a salmon fillet skin on I got browning on the skin but not on the flesh. I put a little oil on anything that goes to the grill and so far nothing has even thought about sticking.
