I like that I can make pasta my way, low carb. When I bought mine, it was about $60 cheaper, listed as new. Made a lot of spaghetti with oat fiber and wheat gluten. Last night I made noodles with semolina flour. There is a recipe using semolina flour in the accompanying book (I would half that). The plastic parts are sturdy and the metal shaft is quite strong, as well as the motor. Makes 1 & 2 batches. Just make sure you really whisk the eggs smooth Cleaning is easy to do. Wait for the pasta to dry and it pretty well flakes off for an easy washing. It's not really loud running. Now and then you might hear a slight squeaking when extruding. Still it is quieter than most appliances. Easy to assemble. You can pretty much look at it and see how to assemble. What can I say? I like it.

My wife and I yesterday had our first try at using the EMERIL LAGASSE Automatic Pasta and Noodle Maker.We used Emeril's Pasta recipe (page 9) and Emeril's Shrimp and Pasta dish (page 31) - both of which were very easy to follow in the included Pasta and Dough recipe book.The linguine pasta created by the machine was OK but not perfectly smooth - perhaps because we were using Bob's Red Mill Semolina Flour which others have separately noted has a relatively coarse grain structure. Next time we'll use Caputo Semola di Grano durum flour to compare finishes.The end dish was superb - and quite rich with all of the butter used in the recipe. Top marks to Emeril!Cleaning up the pasta maker does take a bit of care - particularly the extrusion disk - but, after drying, the different parts come back together with minimal fuss. Storage is a breeze - with enough room for all the extrusion disks, both measuring cups and the cleaning brush / probe to fit into either the mixing cavity or the slide out drawer.Tonight we'll be trying out the slow juicer!

My 10 year old LOVES pasta. She literally could eat it every day without complaint. We purchased this unit for her to make her own homemade pasta and she could not be happier. This unit works great and makes about 7-8 different kinds of pasta, all in less than 20 minutes. We have used it for several weeks and have made gelato also. It's so much nicer having fresh made food knowing first hand what ingredients go into making them. Clean up of the pasta forms is a little tricky, but the tool they provide makes this process easy. I don't think we will ever buy pasta from a store again.

I wouldn't normally purchase an item with a five star rating of only 63%. After reading reviews and tips from others who enjoyed this item I though I'd give it a chance and purchase it. I am glad I did.This is a wonderful pasta maker! The main thing to remember is to use the correct amount of flour and liquids. And watch some of the videos on YouTube on the Emeril Everyday channel with Chef Claire. She gives wonderful tips if the pasta is too dry or too wet and how to remedy those issues.I love this pasta maker! I normally make pasta by hand which I love doing and will continue to do. When I am a bit more pressed for time I will use the Emeril Pasta & Beyond Pasta Maker. Making pasta by hand normally takes me between 90 and 120 minutes. Using this pasta maker a one pound (or double batch) takes about 20 minutes.I have used this several times and have made linguine, spaghetti and squid ink fettuccine. All came out great and tasted incredibly fresh compared to boxed pasta. And it cooks significantly faster than boxed pasta.My only issue is the pasta discs are a little hard to clean and can take a bit of time to clean well. I haven't placed them in the dishwasher yet but will try that the next time I use my machine.Normally it's only me and my wife to cook for. One thing I love about this is you can make either an 8 oz batch or a 16 oz batch which is a great option if you don't want to have more than one meal of pasta. I start to heat my water when I begin to make the pasta. The timing is pretty close. Another thing I love is you don't have to use a drying rack for this pasta. You can if you'd like but it is not necessary.I definitely recommend this as I have not had any issues with it and it makes a very nice, fresh quality pasta in a timely fashion.

Update 3/9/2021I've been going around with their customer service about getting a replacement part, literally a 10 cent part but of course they do not have parts. CS said I had to send the entire unit in, I offered to send in the 10 cent part, which then stated the entire unit has to be sent in for a replacement. I said I didn't want a replacement I wanted a refund. Looks like I'm going to have to pay $50 return shipping to get a refund of my money. PLEASE SAVE YOURSELF THE AGGRAVATION AND BUY A DIFFERENT BRAND, THE DESIGN IS DEFECTIVE AND THEY DO NOT STAND BEHIND THEIR PRODUCTSThe back seal retainer tab broke off, see picture, and allows the back seal to walk out. I emailed customer service immediately they sent an email requesting proof of purchase and model / serial number. I sent that a week ago and no response. So now I have a $200 brick that I cannot return. If I receive the part quickly I will update my review but until that point I would encourage everyone to avoid this pasta maker.It is not as hard to use as the YouTube videos but certainly not as easy as the infomercial. Because this is a home appliance and everything is plastic it doesn’t have a ton of power, this means it is very finicky with the moisture. Better to start with the recipe and add a teaspoon of water at a time. Once you get rid of the dough flaring when it comes thru the die you are home free. Make sure to oil the die before assembly.

I used 200 grams of Bob's Red Mill Kamut wheat berries, milled pastry setting on my Wondermill (both purchased through Amazon) and 3/4 teaspoon salt in the tank. For the liquid, I used 1 egg, 3/4 tablespoon olive oil and added enough water to equal 80 grams (40% hydration). Followed the instructions for a single batch on the Emeril pasta extruder. Worked perfectly! Delicious whole grain pasta in minutes!
