We used two fillet steaks (almost the same quality and portion) to test the different tastes of traditional iron pan frying and sous vide cooking.

The core temperature of the steak that was fried on a traditional iron pan reached 125°F, which is the best temperature for a medium steak. However, it can be seen from the cut surface that about 40% of the meat around the steak is still fried. Generally speaking, the food cooked by the traditional iron pan frying method will generally reduce the weight by 15%-20%, most of which is the water in the food, so the taste of the food will change.

The steak cooked by sous vide at the same low temperature of 125°F is heated again with a spray gun, so that the Maillard reaction occurs on the surface of the steak, and the whole steak is fully locked in the gravy. Judging from the cut surface, this steak is perfect-the inside is pink, the standard medium steak, and the surface is heated quickly at a high temperature, showing the color of the top steak. The sous vide cooking can minimize the loss of moisture from ingredients. The water loss is only between 5%-8%, which can retain the original flavor and color of the food to the greatest extent, and retain the nutrient content of the food.

I took my first step into Sous Vide cooking but not in the traditional style. I used the Sous Vide machine to cook a pressed ham for sandwich meat. I was surprised how good the meat tasted. Way different from storebought. I need to experiment with times and temps, and, I need to use about 1/2 pound less in the meat press. I stuffed 2.5 lbs. into the pot and it was a little too much and the heavy spring pushed out a lot of juice. BUT, no problem for me, I just slathered on some mayo and made a great tasting sandwich.I am sold on this style of cooking and I can't wait to try new recipes. My Vpcok Sous Vide machine worked like a charm. And after I re-read the instructions a couple times I figured out the timer and temp controls. After that it was smooth sailing. One thing I did wrong...I used a pot that was too big and too tall for the cooking machine and ran out of water once. Practice makes perfect, so I better get stared.Thanks Amazon and thank you Vpcok for a nice easy to use piece of kitchenware. I will recommend the brand and that Amazon is the place to buy it.Update: I am trying to use the sous vide machine for making pressed meat in a Ham Press. The Press lid is about 7" high and finding the right pan to hang the sous vide machine on so I van make sure I have enuf water but not so much that water runs inside the press. I also did use it for cooking meat in a vacuum bag and it was easy to find a middle measurement of water. I wonder, do any one of you use the sous vide machine to cook in a meat press?

I use it to heat my water for film chemicals. Does a good and fast job heating. Easy to use, nice big display. Circulation starts fast and is quiet. finicky on the liquid level but not annoying

It works within a few degrees. I have to adjust mine up to get the temperature I want. My bigger concern is the clip that attaches it to the pot or box. It seems flimsy and tends to fall off altogether. And as some other people have noted, if you want to cook for many hours the timer only moves up a minute at a time, so you have to push the timer button a lot. Mine registered in Celsius, but I learned somewhere that if you hold the temperature button down for 2 seconds it will change to Fahrenheit. Easier for this American! For under $50 it gets the job done, and as I don’t anticipate using it daily it is just fine for my needs. Very quiet, rings that indicate heating are very helpful. Good water circulation.

I used this sous vide machine for a 3.5lb rump roast I bought, seasoned, vacuum sealed and froze a couple weeks ago. I couldn't wait to try this machine out, so I thawed the roast completely and filled the recently purchased 12L tub with hot water from the tap, inserted the roast, set the temp at 132.9 degrees F, set timer for 21 hours. In 4 minutes it was up to temp and started counting down. After the 21 hours had elapsed, the machine turned off. I then removed the roast from the water bath and let it cool a bit, dried it off and refrigerated it for about 4 hours (dinner time). I put an excellent layer of more seasoning on all sides and seared that baby on all sides very well. After a 20 minute rest, it was sliced as thinly as I could and...IT WAS DELICIOUS!! This machine did an excellent job and I am so glad I found it on Amazon while it was on sale. A most excellent purchase, fast shipping, excellent seller. If it ever breaks I will buy another. Highly recommend this product and seller.

Este producto lo he estado utilizando para un proceso de revelado fotografico C41.Debo calentar productos quimicos a 40 °c constantes para que estos quimicos actuen en pelicula negativa.Ha cuplido su proposito. solo que he notado que con un termometro externo las temperaturas son diferentes. para llegar a la temperatura correcta de 40°c debo agregar 2 o 3°c más para alcanzar la temperatura correcta de mi termometro externo. una vez alcanzada la tempratura el aparato la conserva perfectamente durante por lo menos 2 horas que es el tiempo maximo que yo he utilizado este producto cada vez que revelo fotos. No dudo que el aparato consiga temperaturas constantes durante mas tiempo.Lo recomiendo, es de uso facil, controles simples pero practicos. facil de limpiar. Estoy contento con la compra.
