The smoky flavor to food comes from the hot flavorizer bars where the gravy drips and evaporates into flavorful smoke.
Flavorizer bars can also shield the burner from the drippings to prevent flames coming up and extend its service life.

These are not bad at all, correct length, heavy gauge steel, seemingly good coating and packed well. I would not mind if they were a bit longer, even a ¼" would make a lot of difference in my grill, but I don't think even the Weber ones are longer.
