This is an excellent quiche/tart pan, with a caveat: it is made of carbon steel. Carbon steel bakeware has wonderful properties, including fast heating, superior heat retention (similar to cast iron, but so much lighter weight), and, when properly seasoned, it develops a fine non-stick surface, without the dubious chemical structure of regular non-stick coatings. So, healthier for your family!Season this pan as if it was cast iron. Wash it, dry it thoroughly, very very lightly oil it all over, then heat in your oven on high heat (400-450 Fahrenheit); after some time (I usually give it 30-40 minutes), turn off the heat and allow the pan to cool in the oven before storing. Seasoning a new pan a few times in the beginning of its lifetime of use helps it to develop its nice non-stick finish, making it very easy to clean in the future. Acids from food like lemons, tomatoes, and vinegar can affect the seasoning, so pay attention and re-season if you do use something like that.This quiche/tart pan is 9”, a great basic size. The bottom center disk pops out for super easy removal of your pie.The included pie weights are small white ceramic balls, which I highly suggest you wash and dry before first using them to blind bake your crusts. There are enough pie weights for all of your blind baking needs!This is a good pan and a good buy if you are willing to give the carbon steel a little extra care. Here’s to happy baking!

I really treat this set like two different products - a great pop-out tart pan AND baking pie weights. I blind bake a lot of pie crusts if I'm using a wet filling, because a lot of my pie pans are ceramic. They look pretty, but they aren't known for putting the best bottom crust on a pie. The pie weights are perfect for that. And the tart pan - I had a standard tart pan, and I honestly just quit making any baked tarts in it because it was impossible to get the tart out without ruining the fluted edge. This lovely little pan eliminates that problem completely. I absolutely love this pan! It has a nice, wide bottom lip to hold the bottom in place, and even a buttered graham cracker crust popped out with no crumbling. I'm very happy with this set!

This pie recipe, like about 80% of the ones that I do, didn’t require the beads for pre-baking the crust. So I can’t yet speak to how well they work.The tart pan itself was great. There was one little section of my piecrust that stuck to the pan, but other than that, it came out smoothly and it did not leak.I’ll update the review if I find any issues as I use it more.

We've been looking for a small-ish size pan for tarts & quiches & when this popped up it was definitely exciting with the included weights for blind-baking pie shells.The pan itself seems very good quality, nice & thick metal used and the edges are turned very precisely.And the bottom fits the outer ring flawlessly from all appearances.The included pie weights seem good quality as well, with none broken and minimal amounts of dust in the package to be washed away.

I have a quiche dish, but not one with a removable bottom (pic 2); it will make it easier to cut & serve. I've never used pie weights, but I've seen them on cooking shows; I'm excited to use them. I like the fluting on the perimeter of the walls of this pan, very pretty. This is a good size, since most of my tart/quiche recipes call for a 9" pan.

Comes with the weights which is great. A nice pan, great for tart recipes with that distinctive shape. A nice gift for someone learning to bake or ready to try something a little different and special.
