I spent a lot of time looking for a pan that would fit many criteria, which this does, and this has the added bonus of being made with 90% recycled material and having a great modern design. The criteria it meets: no long handle; see-through lid; oven safe to 500 degrees; non-stick with no known harmful chemicals; can be used on any cooking surface; the conducting layer goes up the sides and is not just on the bottom; can use any cooking utensil; can go in the dishwasher (which I don’t do, but in case someone else at home might); 5.5 quart, so deep enough and wide enough to saute 4-5 pieces of meat and add greens like spinach without making a mess. And I really need so little, if any, oil. The only downside is that it is expensive, but I feel worth it. Love it.

We splurged on one of the basic sets from this Scanpan line a couple years ago, and have no complaints about them. They are really good pots and pans which provide excellent heat transfer from flame to food, allow the proper amount of steam off when cooking anything--thanks to the two little holes in the side of all the lids--and clean up is a breeze.This larger pan is my favorite, though, after eyeing it at Sur le Table one day and then finding it on Amazon. I love the size and use it more often than any of my other pans. Before this, I used a large iron skillet when I needed something larger, and I still like my big iron pan for certain things, like frying bacon, but nothing else beats this large pan with its see-through lid. I imagine they will all last for decades and are well worth the price tag. In fact, with all my great Scanpans, I have continued to be more and more creative in the kitchen, meaning we eat out very rarely these days, so it has already more than paid for itself.BTW, one of my other pans began to show signs of peeling like the old, cheaper teflon pans would do after use. I contacted ScanPan's customer service, was sent an email immediately with info on how and when they replace a product (making sure one hasn't abused the pan/used it incorrectly). Took about one week total to get my new replacement pan as they said that there were a few times when the layers don't properly adhere in the production and this flaking can occur. I was thrilled they stood by their product and the process was seamless. Best advice is to keep your receipt(s). Without that, not so sure it would have been so easy.UPDATE: 6/12/15 - I've since returned not only this Chef's pan, but two more - Scanpan continues to stand by their product and has replaced four of my CTX pieces (so far). Ver sturdy, huge non-stick pan with vented lid. Extremely handy for making large meals. Easy to clean (I handwash mine, because it's too big for my dishwasher, but it's so easy to clean, putting it in the dishwasher would just seem like a waste space). Takes a few minutes to get up to temp, but once it does, the heat is very even with no hot spots. Very nice pan.

Love this pan. I use it for oil-free vegan cooking. Nice large size, great no-stick ceramic lining. Easy to clean. Browns potatoes and onions nicely. Also great for stirfrys, paella, and "fried" rice/grain dishes because of the higher sides.This my second Scanpan. My first, a frypan, has served faithfully for 6 years, and is still going strong. The finish has held up well. This time I wanted a larger, multipurpose pan with a lid.***Update 12/18/2020***I have had this pan for over six months and have used it nearly every day. I use it on a gas range. The exterior stainless shows a few insignificant scratches from contact/dragging across my rangetop grids. Otherwise, it is as if br and new. The nonstick ceramic interior looks and performs exactly as it did on day one. I am very satisfied with this pan and plan to buy another, smaller skillet. Definitely recommend.

I stumbled over Scanpan CTX cookware as I was searching for a replacement for my venerable cast iron skillets (seem to be getting heavier!). My test piece was a skillet, and it worked so well I bought several more pieces, including the Chef's pan. This piece sits permanently on my induction stove top, and is used for just about every meal. It heats quickly and evenly, it sears my chops and it simmers my sauces. In three months use I have not found anything to stick; I often clean it by pouring in some cold water with a drop of soap, turn on the induction to for a few seconds to warm it and run a dishcloth around, rinse and dry. My All Clad pans never get used any more. Quite pricey, though, I'm hoping that in a few years time I will look back on them as an investment.OK, after three months, I have to say that the frypans now stick! Even with a starter of butter my two omelettes stuck to the pan.

I absolutely love this pan! Have cooked many meals in it and it is a snap with clean up. Nothing sticks, I can literally just wipe out the pan with a paper towel. It cooks everything evenly. Finally a pan I think will last for decades. I also bought the big dutch oven and it too is fabulous. They are expensive but really if they last like I think they will, it is money well spent. I have bought many over the last 10 years, much more then the cost of one of these pans. I plan on buying a small pot and a fry pan. I would highly recommend these.

Plenty of room for multi portion cooking. Very expensive and surprisingly lightly made although the quality is evident (the lid is especially lightweight and feels a little delicate). Cooks well and cleans up easily too.

The Scanpan Chef pan is huge , but still very smart, well designed and in excellent quality. Fits all jobs , inclusive inside the oven . Goes well in to dishwasher, but because it big, it is normally handwashed. The search for quality and capacity was the reason I choose this product. It lives fully up to expectations!

I was doubtful about the product claimed to be so good until I tried it. It's really amazing an awesome frying pan.This pan come with a perfect fit cover which make cooking a breeze, I will only consider scanpan for any replacements of my old frying pan in future.

I have been conquered by the Scanpan CTX series and love all the pieces I bought to death. This one is no exception. Great workmanship and build quality.Note that there's 2 small holes on side of the lid. I sometimes cook at low temp and want to block these holes. I found that a tiny string that I cut from a silicone ustensil I have will do the job.
