I am a little new at cheese making and impulsed bought this rennet so I could get started, really wish I would have got the liquid kind. There are very vague directions on the package that basically says to dissolve one tablet in 30ml of water and let sit for 20 minutes. One tablet can be used for 50 liters of milk, according to the instructions. Since I was only using a gallon of milk to make fresh mozzarella, I cut the pill into quarters and used one quarter. It did what it was supposed to do which was to separate the fat from the whey but the cheese didn't really stick together right, although it tasted fine. I tried a second time and used half the pill this time and the cheese came together this time. The tablet can be ground up into a powder to dissolve easier in water. There are 10 tablets and according to the package is best before 08/2020 and I purchased this in 10/2018, so basically its good for 2 years. As far as storage, I've been leaving it in my cupboard since there was no storage suggestions on the package.
